Raw mesquite honey is harvested from remote areas of the beautiful Sonoran desert North and West of Tucson, AZ and the Green Valley area... Mesquite honey has a traditional sweet flavor and pleasant aroma. The mesquite tree is highly regarded for its many medicinal properties including the protein rich mesquite meal, flowers for tea, the healing sap, its famous hardwood, and the high quality pollen and honey produced from the bees. This honey is truly a treat for any honey connoisseur. Note: our mesquite honey is warmed to pour during the off season while keeping temperatures and low as possible; this honey will crystallize and can be warmed to soften. Honey is a supersaturated solution of sugar made by bees. Honeybees (Apis mellifera) collect a liquid secretion from flowers, called nectar, and take this back to their hives. At the hive, honeybees add enzymes to the nectar, and place it in wax cells where it ripens to form honey. During ripening, the enzymes convert sucrose (a type of sugar in the nectar) into glucose and fructose. The above statements have not been evaluated by the Food and Drug Administration.
